Paulo began his career in London beverage trade 10 years ago at Bank Aldwych and Just Saint James as head of bars. In 2005 he took on the role of Head Sommelier for the 3 Michelin star chefs Pourcel brothers at W’Sens. In 2008 he made the move out of fine dining to take on a new challenge, being appointed Group Beverage Buyer and Operations Manager at ETM Group. In this role Paulo designs wine and drinks lists for 10 very different sites, including high-quality pubs, restaurants and wine bars across London. Catering for such a diverse clientele he had to ensure that his Chelsea diners are offered the finest wines and cocktails, while supplying East End locals with their favourite cask ales.
In order to promote enthusiasm and better understanding of wine, Paulo established the ETM Wine Academy in 2010. The twelve week course was based on his WSET Diploma education and has been incredibly effective and helped ETM Group to gain several awards such as Best UK Bar Group (Caterer 2009), Pub Company of the Year (Restaurant Magazine 2010) and Best Group Drinks Offer (Harpers 2012). Paulo was also nominated as UK Best Mixologist by Archant Food & Drinks Awards in 2009 and recently in 2013 to Pub Personality of Year by Imbibe Magazine.
